Ethiopia Darsa Sake is in the Yirgacheffe region and quite a small producer. Processing on this is an oxygen free, carbonic maceration which is a method borrowed from wine makers.
Well processed and easy to roast (don't get too dark though). In the cup you'll get sweet sultana, malted flavours and a juicy finish. We've been drinking this in the Brazen for the last week and it's been great hot or cold.
Pricey so packed in 1kg lots.
