Ethiopia Sidamo Washed

Ethiopia Sidamo is from Sidama, SNNPR (Southern Nations, Nationalities, and Peoples' Region). This is one of the few areas of Ethiopia that produce dry and wet process coffees close together, typically each region has a bias one way or the other, mostly based on water availability.

This particular one was washed and hand sorted but like most Ethiopian coffees it's not size sorted. Bright and zingy in the light roasts, full of citrus aromas and similar mouth feel, take it a bit darker and you add body, sweetness and retain some of the citrus aromatics while adding cocoa and muting the brightness. Similar in style to Yirgacheffe, roast to suit your taste!
